Sickness

So I became sick and didn't really do anything, hence the lack of posts as well as lack of kilometers.

But I should be back now completely, and I was really good with eating (if we don't count last night - chips are on of my weaknesses) even on saturday when we had an early thanksgiving for some danish friends.

I did want to show one of my new favorite meals: The Mango salad with chicken. This is what I ate and I was completely satisfied (and proud of my portion control).

It is also really easy and somewhat cheap to make.

You need (for two):

  • A mango
  • Iceberg lettuce (or another, I just like the iceberg)
  • Two tomatoes
  • Cucumber
  • Feta
  • Two Chicken breasts
Set your oven to preheat to  200 Celsius/390 Fahrenheit. Season your chicken breasts with e.g. lemon pepper (you don't need any grease), and put them in an oven safe pan.
Set the pan in the middle of the preheated oven for 30 min. and they will come out done a juicy still.

While the chicken is in the oven cut the lettuce, tomatoes, cucumber, mango and feta and put them all in a mixing bowl where you mix them really well.

Once the chicken is done, you make plates with a chicken breast and some mango salad and sit down at the table to enjoy a fresh meal.

I don't recommend bringing the bowl to the table, or rather any pots in general as it is much easier to overeat if you have it right in front of you as supposed to having to go to the kitchen.
